Gretel Diaz

Gretel’s love for managing Chef-driven concepts started in 2015 when she took over as the Cafe Manager for Chef Walter & Margarita Manzke’s Republique. After overhauling the entire Cafe Service, she moved on to become the GM of Petty Cash Taqueria. Wanting to dive into a more fine-dining casual environment, Gretel joined Michelin-Starred Chef Josiah Citrin as the opening GM for his Manhattan Beach Concept, Costa MB. As a first generation Mexican / Cuban American , her fondest memories in life have always revolved around food. Having a strong connection with her Mexican heritage, Gretel joined her childhood best friend at GT to be able to create those fond memories for their guests.

Jason Beberman

Jason Beberman is a native New Yorker who traded the subway for a surfboard when he moved to LA in 2017. Jason has been cooking for over 18 years, working at some of the best kitchens in NYC including: Town with Geoffrey Zakarian, Veritas with Scott Bryan, Gramercy Tavern with Michael Anthony and most recently he was the Director of Culinary Operations for Empellon with Chef Alex Stupak. In 2020 Jason became the executive Chef of Guerrilla Tacos and Tiago Coffee.

Brittney Valles

Brittney Valles began her work in hospitality with Chef Walter Manzkee at Petty Cash Taqueria in 2013 as a host, and within a month was promoted to Office Manager. When Petty Cash began to open its second location, she had the opportunity to witness opening a restaurant. Brittney began to be loaned out to other restaurants to help them set-up their administrative procedures. She helped with the opening of Otium and Rose Cafe. In 2015, she graduated from college and worked with Chef Wes and Guerrilla Tacos part-time. As the operation grew, so did her role. By 2016, she left Petty Cash and was working with Guerrilla Tacos full-time. During her time with Guerrilla Tacos, she continued to help as a management consultant for other restaurants, up until the opening of the brick and mortar location opened.
